PAAL PAYASAM (പാൽ പായസം )is the first item that one would list down on the menu for a festive occasion. Ideally, the milk should be cooked on a slow flame for a long time till it thickens and gains a rich flavour and colour. Alternatively, you can even use condensed milk to prepare this faster.

Paalpayasam

Ingredients

  • Milk – 3 litres
  • Sugar – 700 g
  • Dried red rice – 150 g (broken)

Preparation

  1. Boil milk. Once the milk boils, add the sugar and boil till it reduces to half.
  2. Add the washed rice and cook on low flame, stir continuously till the milk thickens and also the rice is cooked soft.
  3. Remove and serve heat / chilled.
