PAAL PAYASAM (പാൽ പായസം )is the first item that one would list down on the menu for a festive occasion. Ideally, the milk should be cooked on a slow flame for a long time till it thickens and gains a rich flavour and colour. Alternatively, you can even use condensed milk to prepare this faster.
- Milk – 3 litres
- Sugar – 700 g
- Dried red rice – 150 g (broken)
- Boil milk. Once the milk boils, add the sugar and boil till it reduces to half.
- Add the washed rice and cook on low flame, stir continuously till the milk thickens and also the rice is cooked soft.
- Remove and serve heat / chilled.
